The modern diet – even the so-called healthy ones – are missing some key foods and nutrients that were present in traditional diets. In this talk, we will explore some of those missing foods and why focusing on what to add to the diet is more important than what to take out. This talk will be presented by Laura Poe Mathes, a registered dietitian in private practice in Viroqua. Her specialty is on gut health, with a focus on ancestral diet and lifestyle principles. She also teaches workshops on traditional food preparation, including fermentation and cooking with the whole animal.
